This is a section of the butchers' alley. It is Greek Easter, and sheep are in high demand.
One part of the sheep, its head, is selling very well, just like almost all of the sheep's body. It is not uncommon to see a housewife leave the market with an entire side of sheep wrapped in a large plastic covering.
This woman is going for a more specific section of the sheep, and the butcher is chopping the meat up following her directions.
The Northern section of the Agora building is the fish market, where you can get a wide variety of the local fish. Note the squid in the top left tray.

Or how about some sausages? This is in the open air section across the Athinas from the Agora building, on the North side.
This stall on the outside of the Agora building offers spices in many varieties and shapes.
How about olives? Greece is famous for its high quality and tasty olives, and this is a great place to get them. This section is on the South side of the Northern section of the open air market. Next to it are stalls offering fruits and vegetables of every kind.
